Grilled Fig and Goats Cheese Open Sandwiches
A rich and indulgent snack or meal that’s quick to make
Serves 1; Preparation 5 minutes, cooking 5 minutes
- Two thick slices of brioche (about 2cm thick)
- 2 figs
- 2 soup spoons of honey (I think a lavender honey works really well here)
- Half a goats cheese log (about Xg)
- Chopping board and knife
- Baking sheet
Start to heat the grill while you get everything ready. Place the slices of brioche on the baking tray and spread the honey over them.
Slice the figs and arrange on top of the brioche and honey.
Slice the cheese (about 3 or 4 mm thick) and place 3 to 4 slices on top of the figs (how much will fit depends on the size of your slices!).
Pop everything under the grill for 5 minutes till the cheese starts to brown, but keep an eye on it and remove it sooner if the brioche starts to burn (it usually doesn’t but you never know!).
